eat your greens and drink them too.

happy friday.
we decided to start our morning off right;
meaning, with a big glass of fruits and veggies.
{we are back onto our juice kick. yay!}
it turns out- our mother's were right all along;
"eat your greens."

the weekend is here already.
we're hoping for rainy days to give us every excuse
 to stay indoors and cozy up side by side.
unfortunately, work steals lovebird away from me tonight-
but, thank goodness i have mowgli eagerly wanting to take his place.
this little pup of ours demands play time and adventures. always
then again, i'd use any excuse to play with him too.

i'm hoping you have a happy, healthy and fun weekend in store.
eat your greens and take your vitamins.
'tis the season to get sick, right?
that means it's time to boost our immune systems-
 ready, set.... juice!

{p.s. want the recipe for the juice above? it's from this lovely and famous blog.}

gulp.

it's official... lovebird has gone off the deep end.
he's jumped into the sea full of greens.
aka: he's juicing.
you know, the thing that all celebrities swear by?
or what vegetarians promote?
or what extremely healthy people do for all three meals?
or what half the nation is doing right now, thanks to new year's resolutions
of eating healthy and slimming down?
regardless, he's jumped on that band wagon.
and, i hate to say it, but he loves it.
on the other hand... i am not so in love with it.
why?
1. i typically haven't been a good "eat your greens" person.
2. i can't cook a dinner full of meat, carbs, starches and all things i love.
3. the juicer is a pain in the butt {excuse my language} to clean.
but, that being said...
it is growing on me.
if i chug it down in one sip, the aftertaste can be cured with a piece of gum.
my body does feel different and better.
and i can finally say i'm somewhat of a healthy eater.
we'll see how long this healthy kick lasts.
{we are both hoping to last longer than the push from it being a new year}
i'm feeling it might be a permeant thing for lovebird.
as for me... it might just be a trial run.

one things for certain:
eat your greens
whether juiced, raw, cooked or covered in ranch.
you will feel better.
and that's a promise.

quinoa

quinoa recipe:

  • 1 teaspoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, peeled and chopped
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups vegetable/chicken broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste
  • 1 cup corn kernels
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped fresh cilantro
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes. Stir corn and black beans into the saucepan until heated. Lastly, add cilantro.

so quick and easy! delicious too.
Also, reasonably cheap if you already have quinoa on hand.

*note: i added grilled chicken, chili spice and lime juice to it tonight.
we topped it off with greek jalapeƱo yogurt. and scooped it up with
multigrain tortilla chips.
{you truly can add or subtract anything from this recipe}
